A few days ago my dad bought a pork tenderloin—I was thinking ‘yummmm’….what is he going to do with it?—since he is a fair cook. But he slapped the meat down in front of me and said, “cook it, and make it good”, just like that.
I decided to make a whole feast.
I did a roasted rosemary garlic pork loin, sautéed chard in white wine, a garbanzo bean salad my mother helped make, and last night I baked up a New York cheesecake for tonight’s dessert.
To be honest, I was afraid of cooking this tenderloin. As my family likes their meat, it must be slightly pink in the center. It was a very new experience for me—cooking meat, that is, because I am truly a dessert baker……but with a focused mind, I nailed the pork. It was perfect. And my family had a great dinner.
